Birthday Dinner, Part VIII and Chewy Chocolate Chip Cookies

Chocolate Chip Cookies–they’re all about home and security.

So when Becca takes Zach a plate of chocolate chip cookies and a glass of lemonade while he’s doing repairs to a drug dealer’s house, she’s taking him more than just food. She could’ve taken him that North Carolina blue-collar standard (back then)–a Pepsi and a pack of Nabs. But it wouldn’t have been the same. It wouldn’t have been a reminder of home and security along with the snack.

Maybe these Chewy Chocolate Chip Cookies will inspire the same feelings in you, summon the warmth of home and a wisp of security. And if not–well, you’ll still have four delicious chewy chocolate chip cookies to assuage your disappointment (and save one for tomorrow–maybe then you’ll get that touch of home and security!).

Chewy Chocolate Chip Cookies

2 Tablespoons unsalted butter, room temperature

1 Tablespoon plus 1 teaspoon granulated sugar

2 Tablespoons light brown sugar

1 Tablespoon egg substitute (or crack one egg, beat it, and use 1 Tbsp)

1/2 teaspoon vanilla extract

6 Tablespoons all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon cornstarch

pinch of salt (about 1/8 teaspoon)

1/4 cup chocolate chips

Preheat oven to 325 degrees. Line a cookie sheet with parchment paper or a nonstick mat. Set aside.

Add the butter, granulated sugar, and brown sugar to a mixing bowl. Mix with a fork until ingredients are combined. Add the egg and vanilla extract, and combine all of the ingredients. Add the flour, baking soda, cornstarch, and salt and slowly stir ingredients together. Fold in chocolate chips. Cover and refrigerate the dough for 30 minutes.

Roll the dough into four balls and place on cookie sheet. Dot the top of each cookie with a few more chocolate chips. Bake the cookies for 8-10 minutes. Do not over bake! The cookies will appear soft and undercooked, but I promise they are done. Remove the cookies from oven and let cool on cookie sheet for 5 minutes before removing to a wire rack to cool completely. Makes 4 cookies.
